The exotic spice, Saffron, comes from the Autumn flowering crocus, Crocus sativus. The flower itself is an item of beauty, delicate, lightly perfumed and ranging from light mauve to purple in colour, but it is the vibrant, red stigma of the Crocus flower which is highly prized. The intoxicating, earthy scent of this dried spice has the ability to transform a simple dish to a new level, adding a subtle flavour and a stunning, rich, yellow hue.
Every process required to obtain the delicate spice is done by hand, from planting to picking and finally the processing of the picked flowers. Harvest occurs only once per year over a short sharp 4 week period. Every morning during harvest, the flowers are carefully picked one by one before the sun reaches them and begins to degrade the quality of the saffron threads. Each flower is stripped of its petals and the 3 pronged stigma is carefully laid out to dry. A process which needs to be done just right in order to offer a premium quality saffron. When treated with such care, just a little of this spice goes a long way.
